Our Farmhouse Spirits motto, “From our soil to your glass,” is the cornerstone of our distilled spirits operation. We grow all of the raw materials for our spirits ourselves, from Washington Navel oranges to several varieties of grapes. Our fruit bursts with the flavor and quality that comes from Biodynamic® agriculture. We bring out the best in what we grow by treating the farm as a whole, interconnected system. That means that we pay attention to the life and health of the soil, the rhythm of the moon and planets, and the vibrancy of the overall system in addition to the health of the plants. We only use natural methods to fertilize and grow our crops, including Biodynamic® sprays and compost that we make on the farm.

Copper Pot Distillation

We use artisan methods to distill our Biodynamic® fruit into old-world style spirits. Made in a small-batch, copper pot still, each spirit is individually crafted to show the subtle flavors and aromas of its ingredients. This method, which always begins with Biodynamic® farming, produces exceptionally high quality farmhouse spirits.

Espirito Biodynamic® Brandy

Aged for over five years in French oak barrels, this brandy unites the flavor and purity of Biodynamically-grown California grapes with the sophistication that comes from aging and old-world techniques. Barrel-aging also gives the spirit more texture and a lustrous golden hue. Smooth, caramelly, and with traces of vanilla, our Espirito de la Valada brandy is bold enough to stand on its own and subtle enough to mix in cocktails. 88 proof, certified Biodynamic® by Demeter USA.

Recipes to Try

HOT TODDY

from Gather Restaurant, Berkeley, CA
.5 oz lemon juice
1 oz spiced simple syrup
3 oz hot water
5 oz brandy
Mix all ingredients together and enjoy!

SPICED SIMPLE SYRUP

1 cup sugar
1 cup water
1 sprig rosemary
1 cinnamon stick
2 whole cloves
Put all ingredients in a sauce pan and bring to a boil. Simmer for 5 minutes. Strain.

ARNOLD PALMER COCKTAIL RECIPE

1 part Lemonade
1 part Lipton Iced Tea Unsweetened
1 part Espirito Brandy
1/2 part simple syrup

Farmhouse Pisquita

Pisquita is our nod to pisco, traditionally the national spirit of Peru and Chile. We decided to make our own because of the special connection of pisco to San Francisco, where it was the drink of choice for generations of miners and sailors. Smooth and aromatic, Marian Farms’ distillate captures the essence of the grapes that were used to make it. The proof is in the pisquita, which was the key ingredient in two different cocktails voted the “Best of 2010.” 80 proof, 750ml, certified Biodynamic® by Demeter USA.

PISQUITA SOUR

from San Francisco, CA
1.5 oz Pisquita
.75 oz fresh lime juice
.75 oz simple syrup
.5 oz orange juice
1 egg white

Mix all ingredients together without ice
and shake to emulsify ingredients.
Add ice and shake vigorously.
Strain into a cocktail glass.

DRY PISQUITA PUNCH

from San Francisco, CA
1.5 oz Pisquita – 1 bottle
.75 oz lemon Juice – 12 oz
1 oz pineapple gum syrup – 16 oz
.5 oz Dolin dry vermouth – 8 oz
Stir all ingredients together. Pour over ice.

Farmhouse Curaçao

A liqueur made with oranges that we grow ourselves, our farmhouse Curaçao gets its flavor from the rich citrus-friendly land and abundant sunshine in the San Joaquin Valley. Demeter-certified Biodynamic® sugar from the lush fields of South America adds just enough sweetness to round out the citrus. This classic Curaçao is a versatile ingredient for all styles of cocktails, old and new. 56 proof, 750 ml, certified Biodynamic® by Demeter USA.

Recipes to Try

PLANTER’S PUNCH

1 1/2 ounces rhum agricole blane
1/2 ounce lime juice
1/2 ounce grapefruit juice
1/2 ounce curacao
1 teaspoon cane syrup
1 teaspoon grenadine
1 teaspoon pineapple
gum syrup
2 dashes aromatic bitters of your choice

Add all the ingredients to a shaker filled with ice; shake and strain into a chilled coupe.

Old Fashioned

Marian Farms’ Estate Old Fashioned is our take on the classic and inimitable Old Fashioned cocktail. The base spirit is aged Espirito brandy (link), sweetened with curaçao (link) and gum syrup and mixed with aromatic and orange bitters. The depth from a mature brandy, luxurious texture and complexity from the myriad of botanicals and spices make this a truly distinctive cocktail. The grapes that make the brandy, the oranges that flavor the curaçao and the botanicals that are infused into the bitters are all grown on our certified biodynamic farm. This Estate Old Fashioned cocktail is truly from our soil to your glass.

Serving

Approximately three servings per bottle. Chill thoroughly in the fridge before pouring over ice in your favorite rocks glass. Garnish with an orange twist, lemon twist, maraschino cherry, or any combination of the three.
